Ingredients:
4 cups all purpose flour
Vegetable oil - 2 tablespoons
Pinch of salt
1 tsp baking powder
Luke warm water - to form dough

First step in making this roti is to combine all the ingredients together and add water to form a dough. Once dough has formed, knead it with little oil at a time. Massage the oil into the dough.

After kneading the dough, roll it out into log shape and divide into equal balls, then roll out each ball and add about a teaspoon of oil all over the top, then with a knife cut the dough halfway down then roll one end to the other and tuck bottom and top in.

Once you have done this step to all the rotis, allow them to rest for about 15-20 minutes. Once dough has rested, roll out one at a time.

You will need a flat pan or a tawa to cook the rotis in, so put one on the stove at medium heat to heat up while you roll out the roti. Once pan is hot put the roti in and allow to cook for about 1 minute. Once you see air pockets starting to form on the top brush some oil on it then flip it over and brush oil on the other side and allow to cook for 1 minute.

Once roti is finish cooking put it in a kitchen towel and clap it. This clapping process makes the roti flakey. After clapping the rotis place them in a bowl lined with foil paper and tissue paper to keep fresh and soft.

You can have this roti with any curry dish or with some dhal.
