Got a Pura Vida whipped cream dispenser for coconut whipped cream, so broke down and tried it. Do have to say, it wasn't as straight forward as I thought. Chilled dairy whipping cream does not harden the way coconut cream does, plus it's processed and homogenized out of the carton. So using coconut cream presented some.. um... challenges. Finally got it to work!
Ingredients:
1 can coconut milk or cream, chilled
1 tablespoon agave nectar
1/2 teaspoon vanilla
My multiple fails were based on the fact that chilled coconut cream is not smooth. When you spoon it out you can see that it's pretty solid and chunky. This prevents it from flowing out of the dispenser correctly. Room temperature cream in a chilled canister did not work, either. You do want it chilled, but you need it to be one smooth, homogeneous, non-chunky cream. Once you 'homogenize' the chilled cream by blending, it flows out of the dispenser perfectly.
