PASKA BREAD Ukrainian Easter Bread

Ingredients:
½ cup warm milk
1 teaspoon sugar
4 teaspoons active dry yeast
6-7 cups flour
5 tablespoons sugar
2 ¼ teaspoons salt
¼ cup butter, cubed and slightly soft
3 eggs
1- 1½ cups whole milk
egg wash
Deco Sugar
Directions:
In a small bowl combine the ½ cup warm milk, teaspoon sugar and yeast. Allow to bloom for 10 minutes.
In a stand mixer fitted with bread whisk, add 6 cups flour, sugar, salt and whisk to combine.
Add the bloomed yeast mixture, eggs and butter. Whisk slowly to incorporate.
Add the milk and continue to mix on low. Scrape down the sides as needed.
Increase speed to medium. If the dough seems too sticky, slowly add more flour (2 tablespoons at a time).
Mix until dough for about 7 minutes or until it comes away from the sides of the bowl. Remove the dough and place on a work surface.
Knead by hand until you can do the “window pane” test.
Stretch a small piece of dough with your fingers. It should be easily pliable without tearing. When you can stretch it without tears and light passes through the dough it is properly kneaded. Form into a ball.
Place dough into a lightly oiled bowl, cover, place in a warm area away from drafts and allow to rise until doubled in size (1-2 hours).
Remove dough, punch down to remove gas. Shape ⅔ of the dough into a disk and place into a 9 inch round oiled pan.
Divide the other ⅓ dough into 3 pieces and roll into long ropes, 18-20 inches. Create a braid. The dough will tend to spring back but it is stretchy so don’t be afraid to pull as needed to form the braid.
Place the braid along the top and sides of the pan or cut in half and place criss-cross.
Cover and allow to rise for another ½ hour while you preheat the oven to 350 F.
Brush the top with egg wash and sprinkle on coarse sugar.
Bake for 35-40 minutes or until golden brown. Fully cooked bread should temp at 190 F or better!
Remove from pan to cool completely before slicing.

I grew up with Easter paska breads made by my Grandma and Mom. These bring back a lot of memories. Your wonderful video is encouraging me to try making these sometime soon. Thank you!
