You were riding in Rain mode. Works good as clearly evident in the video.
I have a 2023 BMW 850 GS and i find there is a BIG difference with throttle response between RAIN, ROAD and DYNAMIC.
RAIN to ROAD is noticeable. ROAD to DYNAMIC is extremely noticeable. DYNAMIC feels like the engine has gone from an 850 to 1000cc. It feels way more than just a quicker throttle ramp. The acceleration and seat of the pants power is exhilarating. Maybe BMW have put in a different tune for DYNAMIC. It certainly feels like it.

Which bike was doing better in the corners? F850GS or Honda AT? For me Honda is a very tall bike and I am not talking about a seat height... Did you try AT with a manual gearbox?

Great video! I have the exact same bike and I have a hero 9 as my chin mount camera but my footage captures way too much of the bike and not enough of the road.

1.) Do you mount your GoPro upside down or right side up?
2.) Do you use the wide field of view or linear?
3.) Is this even a chin mount or is it at the top of the helmet 😅

Maybe you know some problem with the engine? They have on early model something like leak filter for dust.

You revving it so much, but how are vibrations? I have 850gsa 2023 and it is sort of unpleasent to revv it over 5-6k rpm - it feels like engine is running without oil and goin to collapse. But in fact - everything is fine with my engine - no oil leak or consumption at 10k km already, no extra fuel consumption, 0-100 in 4 seconds. But I don't feel joy revving it like you do on your video.
