My mom used to layer these on a diagonal and spry oil on them and put them in the oven. (Somewhere in between your thickness and hers.) And bake them until the edges were nice and crispy, but the inside was soft. She called them home made potato chips, but they were more like scallop potatoes without the creamy sauce. I think you would like them. I loved them growing up.
