A honkytonk is a country expression for a bar but usually a honkytonk will have live music and dancing so it's not just a bar where you go to drink, it's a place were you go to have fun AND drink.
I think what you were trying to think of with the model of the castle was "Game of Thrones"

Adam likes Dungeons and Dragons (AD&D) and he has an entire game room full of miniatures. A Honkytonk is the local country bar where everyone hangs our, dances to country music. So they're talking about being a local legend at the country bar.

A Honkytonk is a bar with a country feel, country music playing etc. I think each of the guys is coming up with their ideas of a quarantine version of a honkytonk. For Chance and Sami, not sure, I think maybe they have a list of things they’ll need for their honkytonk theme party, but because of quarantine they don’t have most of the things on their list. At any rate, this is a fun song and they did a great covering it! Love those low notes in there too!

One of my all time favorite songs. Honky Tonk is another name for a Juke Joint. And of course you don't know what that means, so it is a place to go --- a neighborhood bar--- where you feel at home.

Hello ladies, Home Free has been releasing videos every other Friday since the Quarantine video. The one you just watch was the second one, then came Flowers on the wall, third was Cover Me you need to watch all the way to the after they stop singing (very important), The latest one is called Meet in the Middle....It's a good one. honky tonks started in american southwest towns near oil fields and in industrial cities in the american south in the 1930's and 40's some early honky tonk artiists where Ernest Tubbs and Hank Williams. Unlike most country music at the time which was acoustic in nature honky tonk music was some the first electrified music and used electric guitars and steel guitars.
