They were used as weapons in the Battle of Hogwarts because the cry of these plants is fatal to humans, and the screams of a full-grown adult mandrake can even kill! Mandrake plants have powerful restorative properties. In the early stages, the root system looks like a small baby, which matures into a small humanoid adult. Even as a baby, the Mandrake's howls can knock a person out for a couple of hours. That's why Neville and Professor Sprout threw pots of screaming mandrakes over the walls onto Death Eaters during the Battle of Hogwarts!

I don't know why but I've always loved Neville being so into plants. He failed at so many things academically, it's nice that one of the things he excels at it caring for other life

And then he went on to co-teach it with Sprout until she retires and he takes over. He also becomes head of Gryffindor apparently with McGonagall taking over as Headmistress.

You see in Pan's Labyrinth the girl puts a mandrake in a bowl of milk and places it under her pregnant mother's bed.
A mandrake is supposed to protect the mother and baby.
