what happens if we select - save new settings. Can't we open old saved projects?

I did that but then when i head back to blender 3.6 i did a lot of stuff before turning back to 4.0 and now old 3.6 settings in 4.0
How can i turn the new one to 4.0 ?

I like the old 2.79 setup better where i could actually find Object/Edit immediately and could use short cut keys to get to the specific parts like loop cuts. I just installed "new Blender" and it didn't give me this option and it sucks. Instead I have to go into "model tab but then where i use to be able to select a vertex with right click to move freely, now i have to use the arrow first. This is all very annoying.
