I like to merge (not stack) bracketed exposures on layer masks when the composition is high contrast. I think this really helps shadow detail precision and noise.... of course, with chiaroscuro that doesn't really matter, but I like to exposure individually for shadows and for highlights and merge in a way that doesn't look as though it is HDR... rather, it just looks like a very clean, well executed and edited image. A good exposure-merged image should have clean shadow detail and well exposed highlights, but also convey that the shadows are in fact quite dark. HDR images of old (and too many current) are just a soup of midtones, leading to.the flattening that you describe
