Proper start-up on the pit boss is door open stack up. Put into smoke with door open let white smoke out before you close door and set to desired cooking temps

Invest in the MEATER probe. I found that the probe that comes with the machine is ok. But you get better results with the MEATER.

Just got one can you share your startup sequence. Wanna make sure it hits the right temperature for three slabs of St. Louis ribs.

I got one last weekend. It broke 3 hours into my first smoke. Bad control panel. "They will ship one out" still haven't received a tracking number. I guess the original panel has a high failure rate.
