It is believed that the origin of shawarma dates back to Turkish lands, where it was known as "çevirme, " meaning "the rotating roasted thing." Traditionally, it was made from lamb or beef, and roasted on a vertical spit. Shawarma quickly spread to the Levant and Egypt, where local touches of spices and sauces were added. In Syria, for example, shawarma became an integral part of Damascus cuisine, famous for its delicious tahini sauce. With the migration of peoples and the exchange of cultures, shawarma spread to various parts of the world, adapting to local tastes. Today, you can taste shawarma in many countries, from North America to Europe and Asia."
A more conversational version could be:
"Shawarma, as we know it today, has its roots in Turkish cuisine. Originally called 'çevirme, ' meaning 'rotating roast, ' it was traditionally made from lamb or beef cooked on a vertical spit. As it traveled to the Levant and Egypt, local flavors and spices were added, creating the shawarma we love. For instance, in Syria, it's a staple food often enjoyed with a creamy tahini sauce. Thanks to cultural exchange, shawarma has become a global phenomenon, adapting to different tastes and cuisines around the world. From North America to Asia, you can find your own version of this delicious dish.

It's doubly good because you added kefir to marinade the chicken for the hottest shawarma since you've been apparently expecting that.
