I remember reading somewhere, perhaps on the same website of the strings-makers you mention in this video, that strings are made with the part of the gut that's to small for sausage. I find it funny to picture in my head a bunch of sheep intestine laid out with one half labeled "for the Grand Conservatory" and the other half labeled "for Frank's Hometown Grill."

For any incoming offended individuals: It is not as though these sheep are killed for their guts and then discarded. These are simply made from what would otherwise be a waste product deriving from sheep that either die naturally or whose lives are ended for other purposes. Use your noggin.
