Speed vs Steam Ovens Cooking Test and Review

In this video resident Chef Saba will show you the difference between Steam and Speed Ovens.
This will include cooking salmon with aspargus and sweet potatoes, and a half chicken, potatoes and green beans.
Each will be tested in the steam oven then speed ovens to see how they cook in each.
You'll see the results of each and watch a quick evaluation of how each meal cooked.
By the end you'll have an idea of which specialty oven might be right for you and your family.

I wish you had done the third test of using the speed oven just as a regular convection oven. I'm looking at speed ovens more as a way to save space between my current microwave and toaster oven, rathe than using the two functions together.

Good comparision. Speed oven is my choice. However, as mentioned you will need to cover up some foods items in a speed oven to avoid them drying out. I use micro oven safe ceramics and oven safe glass for this.

Yale's nomenclature is interesting. "Combi" is a well established term for steam convection ovens dating back 30 years or more. However, unfortunately, a number of manufactures have recently started using "combi oven" to describe their bastardized Frankenstein microwave-conventional ovens, which creates confusion (I've had to remove posts from the CombiSteamOvenCooking subred that ask about that off-topic topic lol). Yale's categorization of them as "Speed" and "Steam" is probably a response to this.

awesome! you just saved me yet another mistake. considered the expensive miele speed oven. but i'm wanting the best food and willing to pay for it. glad i didn't get the speed oven!

Thanks for reply. Looks like SKS is “steam assist”. I’ve heard it’s good for I think caramelizing and a couple other things but does it also steam food in general? Trying to figure out if it’s even worth having if it’s not a “combi-steam”. Can you tell me if Thermador’s is combi-steam or steam assist? Website really not clear. Thanks again. I appreciate it!

I’ve done a lot of online (I must’ve seen your complete video library by now - they are great!!) and in-store (I’m all the way over here in Sedona AZ) appliance research over the last year in preparation for my first home remodel and am still really confused about steam and speed in trying to get to a decision. I was hoping to go with Wolf or Miele but other factors like finding out I need a brand new HVAC system among other things have me looking to less expensive packages. Besides the top three covered by Sava in this video are there any other brands that offer a true combi-steam oven and inverter speed oven? In a perfect world my kitchen would have a total of two ovens that do it all: a convection oven that is combi-steam and an inverter speed oven that covers microwaving. Are they always smaller in size than a regular oven? In other words would I be hurting resale value to not have a conventional size oven in my home? In looking at other brands’ websites (like SKS, Thermador, etc) they really do not make it very clear what their “steam ovens” do, or even the actual size of the usable interior vs the usual installation specs. Really appreciate all you do and any clarity you can give me!

Want double ovens and a microwave but don't have room. Shopping to find out if the Wolf speed oven can be an everyday microwave but then used on rare occasion (holidays) as a second regular convection oven. Would appreciate any help you can offer - thanks

to be fair, if you're replacing a microwave the speed oven makes the most sense and can be placed under a counter just like a microwave draw
