The purpose of using a plastic bowl in the sink for washing dishes is to prevent germs. If you use your sink for multiple purposes you would be amazed at the amount of invisible germs that are in that sink, (unless you clean and disinfect your sink each time you use it, of course, and most people don't.)

Think about all the things you do in your kitchen sink!
When you're cooking = contamination from meats etc.
When you're gardening = washing or rinsing your hands
When you're cleaning = all those harmful chemicals that get in the sink from cleaning products

ALL the things you do in your kitchen sink leave either chemicals or invisible germs and you should either clean and disinfect your sink before you wash your dishes in it EVERY time OR use a designated plastic bowl to wash dishes separately.
