Ingredients

Egg - 6 nos
Onion - 3 or 4 nos
Green chilli - 3 to 4 nos
Ginger - 1 nos
Garlic -8 to 9 nos
Curry leaves - 2 to 3 sprigs.
Tomatoes - 1 nos
Red chilli powder -1 tbsp
Coriander powder - 1 tbsp
Red chilli powder - 1 1/2 tbsp
Garam masala - 1 tbsp
Pepper seed - 1 tbsp
Mustard seed - 1 tbsp
Salt - 1 or 2 tsp
Oil - 3 to 4 tbsp

Method

In a pan, bring the water, salt and egg to a boil.
Drain boiled eggs and put in a bowl filled with cold water .
Then crush the pepper ,ginger and garlic ,set aside.
Deshell the boiled eggs and keep aside.
Heat oil in a pan,add mustard seeds and let them cracle.
Add dry red chilli and saute them well.
Then add crushed ginger ,garlic and pepper seed .
Saute them well for few minutes.
Then add curry leaves and green chilli ,saute them well.
Then add chopped onion and saute till onion become transluent
Sprinkle some salt and saute them well.
Then add turmeric powder ,red chilli powder, coriander powder and garam masala .
 saute until the raw smell of the spices completely disappears.
Then add chopped tomatoes and saute them well.
Pour some water over them and thoroughly mix them .
Cover and cook them well.
Add boiled eggs and mix with masala .
Cook for 4 to 5 minutes.
Take the pan off the heat and set it aside.
Serve the tasty egg roast with appam.

മുട്ട : 6 എണ്ണം സവോള : 4 എണ്ണം ഇഞ്ചി : 1 എണ്ണം വെളുത്തുള്ളി : 8/9 അല്ലി തക്കാളി : 1 എണ്ണം
പച്ചമുളക് : 3/4 എണ്ണം കറിവേപ്പില : 2/3 എണ്ണം മുളകുപൊടി : 1 സ്പൂൺ മല്ലിപ്പൊടി : 1 സ്പൂൺ
കുരുമുളക് : 1 സ്പൂൺ കടുക് : 1 സ്പൂൺ ഉപ്പ് : 1/2 സ്പൂൺ വെളിച്ചെണ്ണ : 3/4 ടേബിൾ സ്പൂൺ

പാകം ചെയ്യുന്ന വിധം

ഒരു കടായിലേക്ക് വെളിച്ചെണ്ണ ഒഴിച്ചുകൊടുത്ത് കാടുക്,വറ്റൽ മുളക്,ഇഞ്ചി വെളുത്തുള്ളി ചതച്ചത് ചേർത്ത് ഇളക്കി കൊടുക്കാം.ഇഞ്ചി വെളുത്തുള്ളി ചതച്ചത് മൂത്ത വരുമ്പോൾ കറിവേപ്പിലയും പച്ചമുളകും ചേർത്തിളക്കി സവാള ചേർത്തു കൊടുക്കാം.സവാള വേണ്ടതിനു ശേഷം മഞ്ഞൾപ്പൊടി,മുളകുപൊടി,മല്ലിപ്പൊടി,ഗരംമസാല ചേർത്ത് ഇളക്കാം.പൊടികളുടെ പച്ചമണം മാറുമ്പോൾ വെള്ളം ചേർത്ത് കൊടുത് അടച്ചുവെച്ച് തിളപ്പിക്കാം.കുറച്ചു വെള്ളം വറ്റി ഗ്രേവി നല്ല പാകമാകുമ്പോൾ പുഴുങ്ങിവെച്ച മുട്ടപുഴുങ്ങി വെച്ച മുട്ട ചേർത്തു കൊടുക്കാം.

This is why I love social media, where it takes you to another continent &villagers to see culinary geniuses without gadgets, music, or endless talking.. i certainly relates to this aroma from my upbringing in ethiopia, where spices are not only a daily routine also used as anti oxidants. We do have centurie old dishes in the highlands surrounded with organic herbs, ancient method of farming to produce spices by indigenous Christian Amharas. I enjoyed watching this lovely lady with all her attire brought so many memories of my childhood where our precious women on Open fire, Clay pots then sauté the shallots garlic, ginger, cardomon, black cumin, cloves, cinnamon tumeric, sea salt, red crushed chilli🌶.the lists go on.
