Seasoned Ackee Rice || Simple One Pot Meal

3 cups rice
1 and 3/4 cup coconut milk ( I used homemade but you can used canned)
1 and 1/2 cup water
1 canned (19 oz) Ackee ( Drain liquid and rinse Ackee)
1/2 onion
3 cloves garlic
2 stalks scallion
1/4 bell pepper (I used red and green)
1/4 medium calabaza pumpkin cut into small cubes ( roughly 1 and 1/4 cup)
Few sprigs thyme
1 whole scotch bonnet pepper
All purpose seasoning and salt to taste
1 tbsp unrefined coconut oil or oil of your choice

I looked so good I drove 34 miles one way today when I seen this to get some from a great jamaican restaurant..the rice & curry chicken. it smelled so good that I pulled into Walmart and eat as I watch the rain come down. The best of 7hour round trip I've had in a long time... it tasted great...

I've been wanting ackee for so long but my grocery store have not been having any for awhile. My dad used to have a ackee tree but he no longer lives there😢 lol hopefully I can find some soon! This looks so good!
