Ray loves finding wild edibles on our hikes. The PNW is full of tasty wild plants. Have you tried any of the ones he found?

There is domesticated form of wood sorrel called oca that has huge big edible tubers that come in yellow, purple, red, pink, maybe orange colors of tubers. I’ve seen many oxalis species from the common weed to purple kinds and kind with tubers kind that goes on the coast of California and have big flowers and leaves 2 times bigger then normal oxalis. Vermont I’ve seen oxalis that grow on the highest elevations surviving minus 20 degrees.
