Ingredients:-
Wet:-
200 gms. Ghee
200 gms. Caster Suger

Dry:-
60 gms. Maida
60 gms. Whole Wheat Flour
40 gms. Semolina
30 gms. Chickpea Flour
½ tsp. Baking Powder
¼ tsp. Baking Soda
¼ tsp. Cardamom Powder
A pinch of Salt

Pistachios, chopped into halves

Method:-
1. In a bowl beat ghee and caster sugar until light and fluffy and pale in colour.
2. In a bowl mix all the dry ingredients together.
3. Now mix the wet and dry ingredients together and form a dough.
4. Refrigerate the dough for 20 minutes.
5. Roll the dough into ball-like shapes and place them on lightly greased cookie sheet.
6. Place the pistachios on top and press in lightly.
7. Bake in a preheated oven at 180°C for around 15-17 minutes.

Delicious Nankhatai is ready to enjoy with Tea or Coffee! HAPPY COOKING!!!

i baked them today. they are delicious. i made a little variation by adding half the amount of baking powder and baking soda each. also i used 3/4th cup of ghee and 3/4th cup of sugar.

Clear instructions on baking it in an oven is much appreciated. It came out excellent. Wish I could post a pic here. But everything from taste to texture to shape was perfect. Took your advice and watched it after 11mins of baking and then a few mins here and there and it was done. Thankyou.

Thank you. The recipe is wonderful. I used a stand mixer to whip the ghee and sugar and it was extra fluffy. I then had to double my dry ingredients to get the desired dough consistency. If you are using a stand mixer or whip and not doing it by hand, I guess you can use 1/2 cup of ghee

I have tried the recipe several times and it turns out delicious only it needs some modifications. 1/2 cup ghee and 1/2 cup sugar are enough and make the perfect nankhatai.

Hi! I have tried many of your recipes and they come out good.
With all due respect to you, In this recipe, did you mean 100 gms ghee and 100gms sugar? Some proportion feels off! I had to add almost half the amount of each flour again to get right consistency dough!!!

Hi Upasna, these look delicious. However i have a technical question. What mode did you bake these on? I have morphy richards 52rcss otg. Should i bake them on convection mode or bake mode with just lower rod on?

I made according to ur measurements but ghee seems to be more than required and it has become sticky but the taste is awesome

I tried these today. The ghee was way too much and I had a melt cookie as soon as I put it in the oven. I was able to pull it out in time and add maida to it. Finally I got these nice cookies. I dont know how the author and the others who baked with same quantity got perfect nankatai
