Traeger Smoked Chuck Roast

Traeger slow smoked, bacon flavored, chuck roast. Even my picky-eater granddaughter loved it! She asked me to teach her daddy how it make it. :D
Ingredients:
Bacon grease for a binder.
Rub: 1 tablespoon each of...
Black Pepper
Kosher Salt
Garlic Powder
Paprika
1 teaspoon Onion Powder
Bed of sliced onions
Smoke at 225 F. for 3 hours (flip at 1.5 hours).
Wrap at 165 F.
Check for tenderness at 198-200 F. internal temp.

great idea on the bacon grease! I have enough to feed the world lol I am using this method today. I like how you did this. It does not have to have all that bark on it to be good. It's been in 2 hrs and looking good!

This is one of my favorite cooks. I have done it several times. So easy! I use a blink camera pointed @ the smoker read out--I can watch the temp while lying on the couch....rain, snow, or shine!

It's easier to use a aluminum pan that way you don't have to worry about getting a hole it and it's easier to work with..

I tried to make this tonight and don't know what happened as I followed the recipe to a tee. It smelled wonderful in the foil after sitting for an hr.and my husband couldn't wait to dive in. Unfortunately it was so tough we now have it in a crock pot hoping that will make it tender. This is the first time I have ever tried something like this on a Traeger, usually do a chuck roast in the crock pot cooking all day but my husband wanted to try a recipe using the Traeger. Hopefully I can get some kind of feedback on what could have happened.
