I agree about how true the difficulty these gods pose for Kratos. But I'm not sure about Sun Wukong's Immortality levels, since in myth, he's stated to have been trained in magic that gives him immortality(1), eaten an entire garden of Immortal Peaches, and 3 immortality pills. And according to a nerdy Wiz, that stacks up to several thousand layers of immortality, to the point where a de-powering chamber meant to take away his immortality only made him stronger.
