Recipe:

Step 1: Marinate The Chicken
Ingredients
* 1 lb boneless skinless chicken thighs
* 1 Tbsp Soy sauce
* 1 tsp Rice wine vinegar
* 1 tsp Sugar
* 1 Egg white
* ¼ tsp white pepper

1) Cut chicken thighs into chunks.
2) Whisk together egg white, soy, sauce, pepper vinegar, and sugar.
3) Add in chicken pieces and let marinate.

Equipment
* Cutting board
* Knife
* Mixing bowl
* Whisk

Step 2: Make Sticky Sweet Tomato Sauce
Ingredients
* 2 Tbsp vegetable oil
* 2 cloves minced garlic
* 1 pinch red chili flake
* 1 Tbsp grated ginger
* 12 ounces tomato juice
* 2 Tbsp rice wine vinegar
* ¼ cup sugar
* 1 tsp sriracha
* ½ tsp salt
* ½ tsp dried basil
* ½ tsp cracked fennel seed
* 1 tsp cornstarch
* 2 Tbsp water

1) Heat oil in a sautee pan and add ginger and garlic. Stir fry for a few minutes until fragrant. Add the rest of the ingredients and cook for 6 minutes until sticky and reduced.

Equipment
* Sautee pan
* Silicone spatula

Step 3: Cook The Chicken
Ingredients
* 1 bowl marinated chicken
* 1 cup cornstarch
* Deep fryer at 350 degrees
* 10 cherry tomatoes cut in half
* Fresh basil
* Olive oil
* Low-moisture mozzarella cut into small-ish cubes.

1) Add cornstarch to chicken and stir until well-coated. Deep fry for 4 minutes, until golden brown, then remove and drain.
2) Add chicken to the sticky tomato sauce and put it in a heat proof dish. Arrange halved cherry tomatoes around the saucy chicken and then add mozzarella cheese.
3) Bake at 500 degrees for 8 minutes, until cheese is melty and golden. Top with fresh basil and a drizzle of olive oil.

* Deep fryer at 350 degrees

* Paper towels
* Small cast iron

Josh's cooking is the right kind of cooking! I don't need to see another person making the same recipe with slight variations! Joshs approach to cooking is the same as Cobra Kais answer to Karate! It's excessive but in the best way! .. FEAR DOES NOT EXIST IN HIS KITCHEN!

You can really tell the food critic is gone by this point because the opening scene was palm heel striking garlic a dozen times unnecessarily until it was pulp. XD screw it, we got the okay from the guy, now we're back in business, I'MA PUNCH IT SO HARD." Like a restaurant owner trying to trick the health inspector. lol

Josh and team, a while back GMM did a chicken-fried-burger. At the time I owned a burger restaurant and the next day I chicken fried a burger and covered it in gravy, to try it myself (we cut it up and shared it with the team). Holy cow so good. I'd love to see that one given a serious redo on the mythical kitchen. Keep up the good work making food fun.
