Shameless copycat of Nando's famous Peri Peri Sauce which I use for Portuguese Chicken Burgers! Complete with the tingly creamy Perinaise pink burger sauce. Better than the real deal because there's no artificial flavours, this Peri Peri sauce is pure real food perfection. It's BURGER PERFECTION!! - N x ❤️

Copycat Nando's Peri Peri Chicken Burgers

PERI PERI SAUCE/MARINADE – blitz:
1 – 3 birds eye red chilies, whole with seeds in (1 is very mild, 3 is mildly spicy)*
1 medium red capsicum / bell pepper, roughly cut into 1.5cm / 1/2" pieces
5 garlic cloves, peeled, whole
3 tbsp vegetable or canola oil, or other plain flavoured oil
4 tbsp malt vinegar (sub red wine or white wine vinegar)
2 tbsp smoked paprika (substitute regular / sweet paprika)
1 tbsp dried oregano
2 tsp onion powder (substitute garlic powder)
1 1/2 tsp white sugar
1 1/2 tsp cooking salt / kosher salt
3 drops red food colouring (optional, for legit colour)
PERINAISE – mix:
3 tbsp Peri Peri Sauce (above)
1/2 cup whole egg mayonnaise (or other mayonnaise)
1/4 cup sour cream (or yoghurt)
BURGERS
2 tbsp olive oil
4 chicken breasts or chicken thigh fillets , skinless boneless (each large enough for a burger)
4 soft rolls, split and lightly toasted (if desired)
2 tomatoes, sliced
Lettuce of choice

1. Pound breast to 1cm / 0.4” thick, trim slightly larger than buns. Marinade with ½ cup Peri Peri sauce for 3 – 24 hours. Cook breast 3 min each side, thighs 4 min, on medium / medium high on the stove or BBQ (adjust heat as needed so they don’t burn too much, some char is legit!)
2. Slather base with Perinaise, top with lettuce, tomato, then chicken. Top with more Perinaise and Peri Peri Sauce as well. Put lid on, sink your teeth in, enjoy!

* 1 = barely noticeable, 3 = mild (my favourite), 5 = extra hot! For other chillis, start with less, blitz, taste, add more if desired, blitz again. Can also use chilli flakes.

Aussie married to a Portuguese here. That looks like a delicious shortcut.
For anyone wanting to make more authentic Piri-Piri sauce, buy some Portuguese olive oil from a good continental deli, and infuse Birds Eye chillies in it in a low oven for 4-5 hours. I bottle the results, keep them for a few months and give them as Xmas gifts. Always in demand from friends who like to BBQ!

Peri Peri is one of my all time favorite meals. Whenever we visit family in Montreal, we go to Romado's - I highly recommend them if you're ever in the area. I do cook whole spatchcocked chicken with Trader Joe's Peri Peri sauce on a regular basis. Your recipes are so good that I can't wait to try this version. The kids prefer boneless chicken so this will be a win I'm sure. I just went to the website and ordered your second cookbook because the first one is so good. I''m not sure that the black char on the meat is good for your health

The black char is a concern - I never char anything. It means the food has heated beyond 100c and destroyed the DNA structure into who knows what random broken structures and chemical bonds the body has to deal with. It is better to heat up the chicken in an oiled saucepan with the lid on and a thermometer rod in the centre of the chicken. When it gets to 72c flip the meat over, and then place the rod back in into the centre, and then heat it until it reads 80c.
