OK. not bad.
Rather than changing the font color directly, you may want to consider using the the Page Layout tab > Theme group to apply the change. There are actually 8 colors used by Excel / Office in different contexts. There may be other context colors you need to change, depending on your background color. Use the Colors button in that group to pick new context colors and save that as a new color group. Then you can save a new theme, using the new color set. That way this change will be available in all Office Apps!

NOTE: Unfortunately, unlike Word which has an option to change background colour, which can be saved in NORMAL.DOM to be applied to all new documents, inserting a picture into the background only affects the single worksheet in the workbook.

Easiest way to get black background with white text: Select entire worksheet then Ctl+1, Then select Fill Tab and set to black, then select Font Tab and set to white, click OK. Bigger question is why dark mode in Excel dosent include automatically a dark background with light font like it has for several years in Dark Mode for Word???!?

you should also mention that borders are also default black so they look weird, red is best, and you can change their color in the border drop down.
