Creamy Red Pesto Chicken:
Ingredients
240g cooked rice
260g chicken breast
Spinach
1 tsp paprika
1 tsp oregano
1 tbsp oil
Basil
130ml low-fat cream
3 tbsp red pesto
50ml water
80g red pepper, sliced
Handful of cherry tomatoes, halved

Steps
Season chicken breasts with paprika, oregano, salt, and pepper. Fry on both sides, then set aside.
Add red peppers, cherry tomatoes, spinach, cream, and some water to the pan. Simmer until the sauce begins to thicken.
Add the chicken back to the pan and continue to simmer until fully cooked through.
Top with fresh basil and serve with rice.

Wow! That looks absolutely delicious! I’m totally gonna make this. It’s so simple, healthy & beautiful. I’ve been looking for more ways to prepare chicken because I’m sooo bored with it I hardly eat it anymore.
