My sister worked in a factory in Georgia cutting whole chickens for fast food places..What she told me was that there ate certain cutting patterns for every customer such as KFC- must be cut a certain way to get the most or desired sections they pay for.

IMHO and as someone who worked there in high school and ate a LOT of KFC, the best parts are the wing and thigh, the breast if it’s crispy and there’s gravy to dunk it in. Throw away the legs.
