Actually in my part of Italy the proper way to cut pizza is with scissors . What he is trying to say is that the dough was not made correctly. Fermenting pizza dough for a few days allows flour enzymes to break down and link with the dough's gluten, which can improve the dough's structure and texture. However,  over-fermenting can cause the gluten structure to break down, and the dough may become a gooey mess. Obviously this dough was not made correctly otherwise it would be easy to cut and to digest . I think it could be that the dough is overworked, because that’s when the gluten is formed. But also, the pizza cuts the easiest when it’s fresh from the oven. The longer it sits, the harder it is to cut. If it hadn’t been for Alessio, I wouldn’t have learned this. I love his little bits of knowledge he drops on us from time to time.

I spent a week in Rome this past June… the amount of jealousy going on in me right now is unreal. I will never be able to eat pizza without a fork/knife or drink coke without a lemon again 😂

In Italy, pizza is made with "00" flour which is very soft (low protein or gluten). In America, hard flour

That just happens when it has a crispy bottom… it’s because the knife struggles to get grip on the bottom layer as it slides around, if you have a thicker more doughy pizza it will cut every time..

Basically they kneeded the dough way too much it causes gluten molecules to form dense block chains making it tough and rubbery.

Isn’t that why a lot pizza places use scissors to cut the pizza. To keep the integrity of the fermentation in the dough. The air pockets within the dough.
