You are 100% correct. I mix my merangue right before I start cooking my filling. I pour the filling in the crust and immediately put the merangue on the filling. I never have any weeping. It took me years to finally figure it out but it always works.

A lite dusting of powdered sugar between the meringue and filling stops the weeping..

I toast my coconut in a nonstick skillet. I’ve always done it like that. Coconut cream pie was my Dad’s favorite pie. I love coconut too. Yummy!

My mouth was watering so bad! Coconut is my favorite then come Pineapple! I don't know but sometimes Pineapple wins first place! Lol. I absolutely love Coconut Cream Pie! My mama would make a pineapple puddin n put Vanilla Wafer in it just like her Banana Puddin and I ate it til I got sick when I was a kid! There was nobody that could bake or cook like mama did! Lol. She had magic fingers! She worked her Magic in everything she made n it didn't matter what she cooked or baked! She worked for the county years n years ago in the middle school cafeteria! She worked for years there and they'd say you can't add this or put that in the food bc of kids or adults allergies! Mama went to work and sent out forms to all parents n teachers n staff to find out their allergies! Then she'd cook n bake accordingly! Yes Tammy, Mama worked her magic at the school and all the kids loved to eat lunch! They begged her to start working at the high school...lol When there Holidays would roll around, Mama cooked the Best Tasting Turkey Dinner that the school had ever had! Everybody praised her on her food! She taught the others working there, How to Cook and make it so no kids had allergies to anything! The homemade Pizza was to die for! She'd show the workers how to put this n that to supplement this! She won the Cafeteria Awards Every Year but gave credit to all the Workers! Kids are picky about school food but no child complained and the middle school in Gwinnett Co school system praised my mom and she went as high as she could go n that was it! They kept giving Awards n raises! Some kids wanted mama to come teach their mamas how to cook certain foods! Lol. They ate foods at school they never ate at home! Yes, my Mama had Magic Fingers Tammy! Lol. Just like yours did! Lol. God Bless ya Honey! 🙏💖💪🇺🇸😀

Girl I'm with you, using the microwave is so much better. When I was a kid my mom would have me standing over the stove stirring, but those pies were great in the end...lol I'm anxious for the holidays, if I make one before I'll be the one eating it all 😁

I absolutely love Coconut Pie (my very My mother always made one for me for my birthday, as she made an absolutely wonderful world famous Coconut Pie! I love the toasted coconut in the filling, but I might recommend not using toasted coconut on top of the meringue, but rather use untoasted coconut since the meringue needs to cook for 20 minutes, the baking time should not cause the coconut to get overly done and be perfectly golden like the meringue. That's how my Mom made her Coconut pie meringue. Just sharing, and food for thought. Love your show and the way you explain your processes. Keep those wonderful videos and recipes coming. I specifically looked up your coconut pie recipe, I’ve used a few times- excellent. Respectfully, your top coconut burns because you’ve pre-toasted what is garnished on top and rebaked. If you use un-toasted on top, they won’t burn. Of course, you will toast what you use inside the coconut cream filling. Just my experience in 67 years of cooking - I’m 73.
