Best part of the episode is Kendall getting to take a bite straight out of the cheesecake, nothing better than getting to have some fun during work.

For anyone curious or worried. That 'doubled' strawberry is perfectly fine to eat. Due to some complex genetic junk, they have a different amount of chromosomes, which is usually disastrous in humans, but plants really don't care too much, it doesn't impact the safety of the strawberry. I can't say anything about taste though. But that might be normal as well.

That jello on top looks a lot like "Tortenguss", a glaze we use in Germany containing cornstarch, carrageenan, sugar and sometimes red food dye and strawberry flavouring. It is used a lot here to hold strawberries or other fruits in place and is always clear. Maybe it is something like that on the strawberry one.

07:13 The reason yours turned out darker is because of radiant heat from the ovens heating element. Basically your cheesecake got a tan. You can prevent this by putting a sheet pan in the rack above your cheesecake so it acts like a sunblock to keep the radiant heat from directly cooking the surface of the cheesecake. This is the same reason home made bread boules often have over cooked bottoms when done in cast iron. The oven heating element shines infrared light directly onto the pan, making it get hotter than the ambient temperature in the oven. A sheet pan below your loaf (not touching the pan), and the problem is solved.

Alvin, you have come a VERY long way. You have a comfortable rhythm with your successes and mistakes, making you much easier to watch than when you first started. Your confidence is solid. I really enjoy your contributions to this channel.

When I was 14 years old, I have tried cheesecake for the first time in my life and it was Junior's! I fell in love immediately and went there 2-3 more times before we flew back home. It has been my goal to recreate that cheesecake ever since, but I had no idea they released their recipe already haha. I will definitely try this, thank you so much Alvin!

When I saw it was Babish posting a video about Junior’s cheesecakes, my mind went straight to Junior Soprano. But all he ever made was that smoothie that went all over the kitchen.

This has inspired me to try different crusts. Like, what about cornflakes or shortbread? Cornbread? Ginger snaps? Lemon would be great with the ginger snaps, while maybe a berry flavor would work with the corn-based crusts.

10:29 there was a video years ago, something along the lines of How It's Made, they visited Juniors and for a brief moment the camera showed one of the workers applying the gel and the bucket was next to her, it was Brill strawberry glaze

New York style cheesecake is my absolute all time favourite dessert so I'm extremely excited for this!

Nilla wafers are, of course, lovely as a cheesecake crust, but don't ignore the amazing variety of Oreo flavors that make spectacular cheesecake crusts. Regular Oreos with chocolate cheesecake, pumpkin spice Oreos or gingersnaps for pumpkin cheesecake, lemon Oreos for Key lime pie or any citrus-flavored cheesecake. The key breakthrough is that nobody ever has to limit themselves to just graham crackers for crust bases anymore.

I’ve gotten a juniors strawberry and pineapple cheesecake every year for years for my birthday and always wanted to try my hand at making one but feared juniors wouldn’t give the actual recipe. Thank you for this!

Watching Kendall take a bite out of that cheesecake felt like watching The Chairman (Kaga) chow down on the bell pepper at the beginning of Iron Chef.

I've been using Nilla wafers for my cheesecake crusts for many years.
I mix them with ground pecans. The crust tastes like a slightly nutty vanilla cookie. ( plus butter and sugar )

the deli i went to in philly as a kid would get their cheesecakes from juniors. i'd always look forward to getting a slice every time we went.

Glad you saw the light of the nilla wafer crust. I know it is sacrilege, but run it up the side half way, and make it rounded so it is almost bowl like. When you get to the edge of a slice you can pick it up and eat it like a pizza slice.

My sister made a pumpkin cheesecake earlier this week. One of the best I have ever had.

I have Junior’s cheesecake and entree cookbooks. Their chicken soup is awesome and I plan on trying the tomato soon.

For a brief second, I thought I had missed an episode of The Sporanos where Junior is known for his cheesecake

I visited NYC back in the 2019 from the UK. I still dream about this cheesecake 😢 it was the most wonderful desert I ever had, and nothing back here is like it. I hope I can try and bring it back to my life with this video. Thank you ❤
