Does the load cell need to be mounted between 2 plates like that or can I design something where I have it mounted on one side to a table and the other side has an attachment to see how much force is required to pull an object through a hole?

Hi. I am having trouble with a couple scales. I somehow, a long time ago, got one load cell calibrated and reading in grams. I am trying to do the same now but I can't figure out what is going on? Did a library change or something? Is there a way to calibrate in grams? Thanks : )
