Your trip to both Japan and South Korea in Spring 2025 should also include a trip to the United States to see your family in both California and New Jersey, as the fares to the US seems pretty cheap during this period. Also, I'd suggest trying out the following on this trip that you haven't taken before: ZIPAir Tokyo, JAL A350-1000, Avelo Airlines, Breeze Airways, Air Premia, and Korean Air A321neo. Although you have been on JAL and Korean Air in the past, they actually introduced new aircraft types to their fleets, so giving those Aircraft Types a try in the future is a big bonus for your travels, to see how their new products compared to products you've tried in the past. For the Japan Airlines flight from HND-JFK, I'd suggest taking the JL004 flight (Nighttime - Second Daily service), in order for you to spend the day in Japan before leaving for New York. Upon returning to Manila from South Korea, I'd suggest selecting the KE 625 flight (Third Daily flight), as this is the only flight to Manila where Korean Air deploys its A321neo aircraft to. This trip would also allow you to try airlines that you haven't flown on before, such as ZIPAir Tokyo, Avelo Airlines, Breeze Airways, and Air Premia. As ICN recently opened its Phase 4 section of Terminal 2 (you might have noticed construction during your LAX-BKK flight on Korean Air back in April), I'd suggest giving a full walkaround tour of ICN Terminal 2 (not Terminal 1) on your return trip to Manila via Korean Air on their Airbus A321neo. To reach your travel goals, I'd suggest flying these airlines on the dates provided for each flight. I hope to see these trip reports on your YouTube channel soon!

By the way, on my DVO-MNL flight when I flew the same exact A330-300 you flown from GES-MNL (RP-C8765), I was hoping for the tri-class A330 with a 2-4-2 configuration in Economy Class, however not realizing that I'd be flying on the high-density A330 with 3-3-3 configuration in Economy Class. For me personally, it was a bit ashaming, as I've never flown an A330 with 2-4-2 configuration in Economy Class, as all the A330's I've taken in the past (Philippine Airlines + Cebu Pacific) have 3-3-3 configuration in Economy Class, a similar passenger capacity to passenger aircraft giants such as the A380 and 747.
