I love bananas. They are super delicious. Don't even have to cut then or wash hands before eating them. Also great for random sugar craving throughout the day.

Recipe:
(makes 3-4 jumbo muffins):

1/8 cup (30ml) buttermilk—or alternatively, add 1 tsp of white vinegar to regular milk

2 bananas

1 egg

2 tbsp oil

2 tbsp unsalted butter

splash of vanilla essence/extract

1 & 1/4 cup (185g) all-purpose flour

1 & 1/2 tsp baking powder

1/2 tsp baking soda

1/2 cup (100g) brown sugar

pinch of salt

dark chocolate chunks

Optional streusel topping: 1 tbsp flour, 2 tbsp sugar, 1/2 tsp cinnamon, 1 tbsp cold butter
method:

Directions:
1. Combine mashed banana, buttermilk, egg, oil, butter, and vanilla in one bowl and whisk.

2. Combine flour, baking powder, baking soda, brown sugar, and salt in another bowl.

3. Combine wet and dry ingredients and fold gently together.

4. Fold in dark chocolate and scoop evenly into a muffin pan lined with baking paper.

5. To make streusel, combine ingredients and use a fork to “cut” ingredients together until they form rough crumbs. Sprinkle on top of muffins.

6. Preheat oven to 180 degrees Celcius and bake muffins for 25 to 30 minutes.

I find overripe bananas to be absolutely grossgusting, but the ones that just ripened are deliche

if you think bananas are gross because they're super creamy, that probably means you've only tried the overripe ones. But trust me, try unripe bananas (they are slightly green in colour), they're so much crunchier and tastier! and also richer in vitamins and have less sugar. Bananas are delicious!

I tried the recipe but baking them at 180° takes forever. I bakes them first at 425 for 11 minutes then 5minutes at 350. They came out great !

The muffins look delicious! Me too I really hate bannas on their own as they alway remind me off feeling sick as I eat them before I run cross county . But banna bread and muffins are my favourites !

The trick is to throw your muffin/pancake mix into a square cake pan, thats what i do for work haha
