I agree very much with the 7s configuration: this is where you'll have the least problems, an really 24V will help to get some power without having ridiculous cable gauges.

The second trick is to use more DC : most devices are in fact DC with a brick. Most bricks are inefficient. If you power as much devices as possible in DC (from 24V you can make whatever is recommended for each device, including USB 18V 12V etc.) then with a relative small system (mine is 2x12v 110 AH reused lead acid in series with 2x150w panels) I manage to shave around €20 each month of power bill, not because I produce that much WH, but because I removed a lot of bricks and use DC (with fuses etc) The problem with AC is that an idle inverter will already tax your power, then conversion have a yield meaning loss. Then when you plug a device, most devices convert back to some sort of DC. Use AC only for device witch have no choice. DC is WONDERFUL for HIFI sound system etc, it deliver pure chemical electricity with no grains, no noise, no hum.

What’s the capacity of 18650 batteries? I thought they were 2600mah, I see on some sites, some sellers list them as 3000mah 5000mah, 9900mah...
