SOL KADHI

Solkadhi is a type of drink, an appetizer originating from the Indian subcontinent, usually eaten with rice or sometimes drunk after or along with the meals. Popular in Goa and the Maharashtra’s coastal region, it is made from coconut milk and kokum, also known as aamsul. A kokani summer drink ,Serve solkadhi with veg, non-veg thali or fish thali. It is useful for digestion and helps to control acidity.

INGREDIENTS:

1 Whole Grated Fresh Coconut,
350 ml. Lukewarm Water,
2 Green Chillies,
5 Garlic Cloves,
1/2 tsp. Cumin Seed Powder,
1/2 tsp. Rocksalt / Salt,
10 to 12 Kokum Pods / Aamsul, or 5 tbsp. Sugarless Kokum Concentrate,
Freshly Chopped Coriander.

RECIPE:

In a grinder, grind together the freshly grated coconut, green chillies, garlic cloves with lukewarm water to make a smooth paste. Soak coconut in Lukewarm water for 5 minutes to extract thick coconut milk. Strain the paste through a fine sieve to extract fresh coconut milk from it.
This process can be repeated a couple of times, but bear in mind that the milk gets thinner with every consecutive extraction.
Soak kokum pods in lukewarm water for 10 minutes. Squeeze the pods to extract the juices, drain the pods and retain the warm water with the extract in it. Or
Sugarless Kokum Extract can be used.
In a bowl, add the extracted milk, kokum concentrate, cumin seed powder and rock salt or salt.
Stir well to combine.
Taste it and adjust seasoning as required. Garnish SOLKADHI with freshly chopped coriander and serve chilled.
