I had the same experience; a book mentioned dairy's effect on asthma. I removed dairy, attacks/wheezing reduced 99% and was able to stop all of my meds. This was when I was 21 or 22 and in the hospital for a severe asthma attack. I am in my late 50s now, vegan since I was 24yo. Different book though.

My husband and I are from Baton Rouge and we went to the Stanford Inn last December, where we were lucky to take a cooking class from Sid. We also met Ann and Larry Wheat and dined with them. Ann laughed about how much food her friend Chef AJ could eat for such a tiny person!

I had the pleasure of taking cooking classes with Sid a couple of years ago during a stay at the inn. We made some *amazing* (mushroom) bacon in one of the classes. I was hoping to go back this year... and then COVID. Wah.

My son was bought up with a varied diet, not vegan /vegetarian so he can make his own decisions and choices. I wish I had know the info of how plant based is so good 32 years ago, I thought I was being a good mother to give him a variety of vegetables meats cheeses and fish . On a school trip he was teased as he had pumpkin and sunflower seeds and raisins in his packed lunch now 15 years later those seeds and raisins are more accepted. Maybe what is thought of as weird NOW ( plant based /Vegan will be accepted as normal in 15 years time
