Great Video, but personally when I make Bearnaise I don't just add tarragon and shallots to hollandaise, I make a reduction with white whine, vinegar, shallots and tarragon and reduce it to only a couple tablespoons, then mix that with your egg yolks before adding the butter. You get more tarragon and shallot flavor then simply adding them at the end, although I do add a touch more tarragon for color and added flavor. I love tarragon and I like it's flavor to be strong when I use it.
