Tres leches cake! This Mexican cake is the bomb. It’s super light so you don’t feel like crap after eating it. And it only uses 1 cup of flour 🤯. Give it a try, guaranteed it’ll become a staple.

Tres Leches Cake
1 cup AP flour
1 1/2 tsp baking powder
1/4 salt
5 eggs, separated
1 cup sugar, divided
1/3 cup whole milk
1 1/2 tsp vanilla extract
1 (12 oz) can evaporated milk or heavy cream
1 (14 oz) can sweetened condensed milk
1/3 cup whole milk
2 cups heavy whipping cream
3 tablespoons powdered sugar
1/2 tsp vanilla paste or extract
cinnamon for garnish

Preheat your oven to 350 degrees. In a mixing bowl combine flour, salt, baking powder. Separate your eggs into two other mixing bowls. Add 3/4 cup of sugar to egg yolks and mix until yolks turn light yellow. Then to egg yolks add 1/3 cup milk and vanilla and mix. Add egg yolk mixture to flour mixture. Combine (don’t overwork). In your other bowl beat your egg whites until you get stiff peaks. Add remaining 1/4 sugar to egg whites. Fold in your eggs whites to the egg yolk/flour batter. Pour your batter into 9x13 pan. Bake for 25 minutes or until a poke test comes out clean. Combine your evaporated milk, sweetened condensed milk and whole milk. Once cake is cooled, poke holes throughout the whole thing. Pour milk mixture on the cake. Refrigerate cake for at least 1 hour (3+ is best). Whip heavy cream, vanilla paste and powdered sugar until you get stiff peaks. Spread whipped cream over the cake and sprinkle with cinnamon. ENJOY!
