As a Nashvillian and old enough to remember and experience this train wreck of a business. I can say with confidence; we're better off with the empty demolished plot that chappy's one occupied.

I worked for a chef like Chappy. He flipped a burger and it hit the floor. Then he put it back on the grill and said "they'll never know". I went on break and walked home and never went back

I find it hilarious that Gordon always asks how the owner rates their food. Every time they say 10/10 and every time Gordon is amazed like: "10/10? Wow, that's amazing!!!"

On the fish and beef cooking: aside from someone possibly being a pescatarian, fish is one of the big 8 allergens and you could kill someone if they had an allergic reaction.

Some people scoff at the Kitchen Nightmares closure rates, but when you actually watch this episode and a few of the famous insane ones like Mill Street Bistro and Sebastian's, then you realize that Ramsay isn't to blame for at least half of the closures. And for the other half, life just happens.

Chappy blaming everything on Ramsay reminds me of one episode of Restaurant Impossible where the owner said he was one day away from closing until Robert Irvine came, did close several weeks or months (but not one day) later, and still blamed the closing on Irvine.

I mean cooking fish with meat is probably one of the worst thing a chef could do, fishes tastes are particular and the other meat sauces could ruin them

Even by the end of the episode Chappy had it written on his face, that he just want to be done with this and Ramsey to be gone.
It was obvious, that he will immediately go back to his old ways.

My wife and I used to love to eat at Chappy's when we lived on the MS Gulf Coast. In fact, it was the last dinner that we had before it was evident that Hurricane Katrina was bearing down on us. (We paid by check and it seems that they never made it to the bank to deposit that before the storm hit so at least we got a free meal.) Like so many others, our lives were flipped upside down and we spent the next several years trying to return to a normal way of life. We were so excited when we learned that Chappy had moved to Nashville so we made a special trip there to dine at the restaurant...and we were shocked at how bad it was. I truly believe that the storm really took a toll on him. I think he felt the pressure to take Mississippi to Nashville but that he needed to be on the coast to really feel at home and thrive. I'm glad to see that he is successfully managing a restaurant in Waveland now.

Chappy stating he hadn’t heard of a pescatarian before was my favorite part of the episode. I’ve heard of pescatarians and I’m not even a chef.

As a chef myself this mixed fish and meat pan makes me want to scream everytime...not just for the pescetarians...there are people highly allergic to fish and seafood...they order a steak and fries not thinking of the risk, cause they ordered something completly opposite to fish and then get this

I suspect Chappy has PTSD from Katrina and went about treating it by retreating into nostalgia because everything is out to get him. In other words, the WORST treatment for PTSD.

Ok I'm sorry but I have been fighting tooth and nail to open my own restaurant making sure that it is safe and all up to code. But an idiot can run a business like that for years and not only have a restaurant but keep it. How on earth did he pass a single inspection

It's scary that he didn't know fish can't come in contact with the same surface as steak and beef. He probably also didn't know that chicken can't either, and the danger of cross-contamination with chicken is so great that you could kill someone. A health inspector would have immediately closed this place.
