i discovered the banana thing a few months ago, it makes life so much and i always cut my apples up so i guess i eat the core too, which leads me to believe eating the core is healthy is bollocks cos no one told my body

I've started eating more of the insides of apples since watching this (and confirming with my own research).

My way of eating apples was already unique because of my unmedicated ADHD:

I take them with me on off-trail hikes to eat messily in nature, then bury the remains in my compost pile or toss them around for birds, little mammals, insects, fungi, etc. to consume.

Sight is an important part of taste.

If it tastes good and you can't see then why not.
But something that looks bad, or (for want of a better word to describe an apple core).woody, then we choose not to eat.

For example, some kids I taught once cooked a cake and put in green food colouring. But it went wrong, they hadn't mixed the colouring properly, and it was a very dark green. Well they gave me a slice, and my brain went "mouldy" so even though it waa perfectly safe to eat, I could not.
