The difference isn't in the knife CS v SS. It's in the person. Are you a person that minds rust and tarnish on your knife, because really that's the difference. The whole world was carved out by men using CARBON STEEL knives. Stainless Steel wasn't used widely in any cutlery until after the 40's. Guess what, real men didn't need to have pretty knives they only looked at once in awhile. They actually used the hell out of their knives and took care of them, because they were an important tool to them not just something they collected to google at.

Thanks for sharing! Personally I do not notice much practical difference between carbon and stainless, other than perhaps sharpening. But then again, often the stainless steels are harder, and if you take a softer stainless It's equally easy to sharpen. And I'd rather have my edge dent than chip out! Mora knives are great, and I now see they have started offering the 510 again as well... so that's something I need to get hold of hehe! Have a good one!

I prefer use a carbon steel knife when im hunting because its easyer to sharp but i always have a stainless knife in my bag for speare if something happen with my carbon knife. Take Care.
