Your Pampanga food trip would not be complete without a visit to Aling Lucing in Angeles City. The restaurant is popular for its sisig, which is made of grilled pig's head and ears, chopped with onion, pepper and vinegar. The dish became popular here and abroad, with many celebrities visiting the place just to try the original recipe. Sisig is also a popular beer chow, but most prefer eating it with rice.
The restaurant can be easily spotted from afar due to the smoke from their griller. There's no parking area, but you can easily find street parking spots with attendants. The restaurant can accommodate many customers. We even saw a large group of motorcycle riders who went there on our way out. They have food display for both dine-in customers and for take-out.
We tried their sisig and it was so delicious. It has a deep smoky taste due to the charring of the skin. The taste is wall-balanced due to the right amount of vinegar, salt and oinion. It is oily and creamy, which complements the well-cooked rice. We got calamansi and soy sauce on the side, but never added those to the sisig. It might go down to having different preferences, like looking for mayo, egg on top or crispy bits, but the simplicity of Aling Lucing's sisig really stood out.
Other food options in Aling Lucing were also good, like their barbeque, buro with different vegetables, grilled liempo and leche flan. We also bought several tubs of frozen sisig.
It was a wonderful dining experience for us. We still like the other versions, but Aling Lucing has set the bar for what a good sisig should be. Literally, it brought back memories from childhood and spent a long time figuring out where and when I tasted this dish before.
