yes the f111 does just release the entire cockpit when you pull the ejection handle
an f111 cockpit was ejected once a while ago and you can visit it
the ejection motor actually still has dome leftover residue from when it fired

Pilots often try to stabilize their planes (if possible and they have time) with the canopy pointing up to minimize risk of injury or fail during the ejection. Since you are propelled in a positive axis perpendicular to the airplane plane they also cant eject close to the ground if the belly is up, or they will drill the ground with their heads
