Eggplant is in season July-October. This vegetable is actually a giant berry, really a fruit but is used gastronomically as a vegetable.

I highly recommend eating eggplant when it’s in season to get the maximum nutritional benefits.

This video will show you how to cut your eggplant in 5 different ways so you can be more inspired to diversify the dishes you cook at home.

What you need is:
Chef's Knife
Cutting board
Mandolin
Cut glove

5 Cuts:
1. Circles/Discs
2. Thick Sticks/Strips
3. Cubes/Diced
4. Cards/Planks
5. Mandolin slices 2.5mm

If y'all are concerned with pesticides and GMOs, buying conventional eggplant is fine according to the Environmental Working Group (EWG). Personally I would purchase organic if the recipe requires the peel of the eggplant. Check out the "Dirty Dozen" and "Clean Fifteen" on their website.

Knowing the serving sizes of vegetables helps with eating the recommended amount of 3 or more servings of veggies a day. 1 cup of eggplant is 1/2 cup cooked. Eggplant is a nonstarchy vegetable so it can take up a quarter to half the plate.
