Based on what Dan is doing at his chateau (Escape to Rural France), this house us entirely repairable. Would be a good idea to approach neighbours and get access to the property behind the house to do a proper inspection on the exterior.

For you, it is not a matter of restoring an old house to what it was when it was built. When it was new, it was not very good, perhaps lousy. What you need to do is build a new house from within the exterior walls. This is the only way you will have confidence in the end result. Essentially, you need to make the house BETTER than when it was new.
