you can sharpen any metal to a razors edge, what differentiates a good metal from a bad one is how long it holds said edge
thats why high carbon metals are typically seen as the best for sharp knives and swords (though it is a balancing act with flexibility because if the carbon content is too high the blade might just become brittle and stiff)
