I’ve loved udon since my college days back in the early 2000s!! But they were the instant ones from the Korean shin brand back then, udon didn’t seem very popular, but it was a standard dish as nabeyaki udon in Japanese restaurants. There definitely wasn’t much variety here in Houston until recently. Feel like places like LA, Hawaii and NYC have so much delicious udon varieties to choose from. And of course Japan. My husband likes to use udon noodles instead of the instant ramen ones when he makes his instant ramen because he feels it’s healthier. Your udon looks amazing!!!

I’ve only had Udon once and I didn’t enjoy it. The noodles were so thick and they weren’t cooked as much as I would like.
But, the Udon that I had came from a kiosk in a very large and famous (in Pennsylvania and NY) market. So, I don’t have anything to compare that with. The reason I got it was because that’s where I buy my sashimi, sushi, onigiri, sushi bowls and the such. They make everything fresh, right in front of you and usually everything they have in the food court is just phenomenal.
Also each counter/kiosk is run by actual Japanese people…or Italian ppl…ya know, depending on what types of food. They lease out their space from the store, so they aren’t actually store employees.
I also love their Italian-American food and their Mexican offerings.
Unfortunately the closest one to me is about 40 mins away, so it’s only a once a month trip.

I think the reason why udon is underrated because most people prefer thin noodles rather than thick so they go for ramen instead of udon. also apparently udon is slightly healthier than ramen

My favourite udon is きつねうどん (kitsune/fox udon)
It is udon with fried tofu, called kitsune udon because kitsune like friend tofu in folklore :)

My mom makes udon for me and it is mostly better than the shops here in Malaysia just to clarify my mom is Malaysian and she figured out how to make it from her Japanese friends. After some trial and error, her Japanese friends find her udon better than the shops.😊

Now hate me if you want for this but if i were to rate the big three noodles from japan (ramen, soba, udon” it would be udon at top than ramen and soba tied since those depend on the season but udon does what both do perfectly its the most versatile noodle dish from japan it can be hot, cold, a curry, thick broth, light broth it can do all the things ramen and soba do and amazingly at the same time

although I cant eat it often, it always lingers in my mind for days after
