I can explain what happened in the end with Mbappé, having watched the whole incident live.

His nose got injured by a collision with Danso's shoulder. He was consequently supposed to be taken off and replaced by Giroud, with Fofana replacing Griezmann. The referee then inexplicably allowed for some Austrian substitutions, but resumed play without allowing Giroud and Fofana to be subbed on.
Because of the substitution being disallowed, Mbappé decided to stay on the pitch until the substitution was made, while Deschamps was fuming at the referees to allow the substitutions. Mbappé was then booked for staying on the pitch (he wanted to avoid France being reduced to 10 while the subs were denied entry on then) after being fouled by Danso, who must have made the most fouls in the game (I counted at the very least 4).
What chaos and strange decision by the referee.
