Tim Minchin gave a reply to Epistemic Skepticism in a poem called "Storm" that I think is the best counter argument you could give against Epistemic Skepticism. I'm not normally a poetry guy but it's a funny poem about critical thinking that I think people will enjoy. You can find it on YouTube. Allow me to quote here. It's too long for me to quote word for word so I will paraphrase.

"'You can't know anything. Knowledge is merely opinion.' she opines over her cabernet sauvignon...so I resist the urge to ask Storm whether knowledge is so loose weave of a morning deciding whether to leave her apartment flat by the front door or the window on her second floor."

This is moreso an argument against epistemic skepticism rather than a description of it.

I love that "epistemic" and "scepticism" use the same letters. They're almost anagrams!

This seems to me to be attacking academic scepticism and not Pyrrhonian scepticism. Academic sceptics are the ones who assert the absolute negative claim that knowledge is impossible, but the Pyrrhonian sceptic simply says that it is unknown and thus suspends judgement and doesn't make any claim whatsoever and thus these bullets fly straight past them. Sometimes the Pyrrhonian sceptics can sometimes consider the academic sceptics dogmatists.
You should have made that distinction between these specific two types of scepticism.

Isn't playing the epistemic scepticism card pointless then? It's the logical equivalent of knocking over the chessboard, right? I mean, if you're going to claim that you can never truly know anything, then why have a conversation about philosophy in the first place?
Then again, I've had a classmate try to do that to my Physics teacher, of all things. He countered with a really good argument that I can't remember right now sadly :(
