I own the oldest Food Truck / Cart in the world, 1860's. Few things I never hear from videos on businesses, etc. 1. Weather / Environment. 2. Trading Times / Hours and Days. 3. Set Location and times at that location 4. Local Major Events to research for upcoming, trade at your set location, and stock more popular foods - considering the type of people going to those events too. 5. Easy access to short-term parking / nearby bus stop, etc for customers. That is all I will share as I had to learn all the pitfalls myself. lmao. Plus, that's all I can remember off the top of my head, I am getting old.

Just found out once I get the truck, I have to wait another 4-5 months for my food license. Feels frustrating but it gives me extra time to study, learn, and prepare my website

I have the product and I know it will sell! But like what you said, I don't have the luxurious budget to open my food truck business. Here's the problem with what I'm looking to do. I live outside the middle of nowhere, there are 5-6 food trucks that service 2 towns and we barely have 3000 people split between them.

I could pick anything because there is no competition. The local restaurants are old Mexican and also old Mexican which everyone is openly tired of, the 3 in the main town are taco or burrito trucks owned by the same family, and the one in the county capital is Hamburgs.... So, there are no competition on that market.

I'm thinking smoked meats (extremely popular but almost always extremely over priced and they end up shutdown in under a year) or Asian anything which lasted forever until they got caught by ICE and food safety.
