I read about this somewhere a while back. What happens is that like 99% of the time the human mind will pick the wrong cup after the first two. There's more to it than that, but that's also why you see him switch choices for the apple AND the knife.

I'm guessing when he sits back down for the final time and gives it a little spin, he could feel where the drag is from accelerating the greater mass. Potentially.

It's a bit easy. Good artistry, but a simple imperfection in a single cup (the cup with object underneath) will allow him to know which to choose under his close scrutiny. Clever.

knowing that he's done this wrong before and impaled himself i'm pretty sure has played a big part in his doing this trick a specific way now haha and as an audience member does remind that this is very real.
