Orange Marmalade Without a Million Steps | Bruno Masfer

Orange marmalade is my favorite, and this technique for it, is relatively easy to do, compared to the traditional one, which I plan on doing in a future video.

INGREDIENTS:
Oranges (desired amount)*
Water (as needed)
Coarse sugar (50%)**
Lemon juice (10%)***
Salt (0.5%)***
Orange flower water (optional and to taste)

PROCEDURE:
1 - Wash and dry oranges - grate skin on a box grater - place grated skin in a bowl and set aside;
2 - Chop oranges coarsely - put pieces in a pot, partially cover with water, bring it to a boil on high heat, then lower it to medium, and cook with the lid ajar for 30 minutes;
3 - Partially mash orange pieces with potato masher or wooden spoon, and continue to cook on medium-low for further 15 minutes with lid ajar;
4 - Place a sieve over a bowl and strain liquid, pressing orange pieces with a spoon (or let the mixture cool down and place it in a muslin bag, and squeeze)
5 - Place reserved skin, as well as the collected liquid into a pot that’s sitting on a food scale and add 50% [or up to 100%] of that number in coarse white sugar, salt, lemon juice and orange flower water;
6 - Return the pot to the stove on low heat and cook until ready;
7 - Allow it to cool a little and place it in clean glass jars, let it come to room temperature, place lids and keep in the fridge (you can also can them.)

NOTES
* You can mix orange varieties to get a more complex marmalade;
** The sugar percentage should be calculated based on the weight amount of the liquid extracted after cooking the orange pieces + reserved grated skin;
*** The lemon juice and salt percentage should be calculated based on the combined weight of both liquid/zest + sugar.

I made marmalade tonight roughly following this video. it came out very well . the orange blossom water is a very nice touch. I am fussy about marmalade and am constantly disappointed by what is available in the store, no matter the price. This made very good marmalade. I'm going to review the video again to pay more attention to details.

I made marmalade with this recipe yesterday, and it is good. I added a cinnamon stick, some star anise and cloves to it also. One thing though, phase 6 "cook until ready" should have some warning that this will take a good while. It took maybe two-three hours before the temp was at 105°C, but to be fair I didn't boil it at max temp (I have an induction stove, and on a scale of 1-14 I used 10-11)

Thanks for this great vid. This looks pretty good and easy enough for me today. I have some Manderinquats that are too tart for my liking. So I’m going to make some jam with. This will be a great way, so I don’t have to work hard separating seeds.

I followed your instructions using mandarin oranges and a few drops of vanilla. Omg it turned out amazing thank you this is the first time I've enjoyed citrus jam. *edited after reading about marmalade needing certain oranges like scotch can only come from Scotland*

I love the simplicity of this method of making marmalade, which does not reduce the quality of the final result. My family loves it

While viewing and listening, I was intrigued by the soft voice, speaking the English language, and its relation to the information saying, "5 May 2022 BRAZIL" ----" BRAZIL!" I am not a native of England, but starting young, 70 years ago, I spent many years in Britain roaming from Dover to London, Maidstone, Gillingham Chatham, Kent area, Cornwall, Par, and South to Portsmouth and Doncaster, Newcastle, Barnbarough, Holy Island drinking mead, Edinburgh and Rosyth and Glasgow and the Isle of Aran and others, so I am trying to fit the accent in this video with the localities I knew so many years ago, but I cannot, and I never heard a person from, Brazil speaking such impeccable cultured English.

However I remember the Geordie sense of humour, as I lived up North but this is not a Northern sense of humour.

As a young man in England, I do not remember ever crying on Saturday night, eating marmalade alone, in my underwear, but I do remember, being alone, during a few Christmases and New Year's eves, in my accomodation, which was a small room in an attic in Gillingham, and my only company during snow falls, was a bar of nougat and a tot of whiskey. I was alone, did not cry, nor was lonely, as the conditions makes one a philosopher about the life we live, and the states we have to face,

Thank you for the " recipe" you used in making Marmalade, and as you noted, I appreciated your other " humane ingredients I listed", which indicate that you are a wise and respectful gentleman. I am still wondering about the locality of your English accent, It was my old landlady at Newcastle Miss Margaret Titilah, who showed me how to make Scottish Golden Marmalade but her language was not spoken in an accent as eloquent as yours.

Than you for the recipe with all its additional tacit and subtle ingredients, The marmalade I made from your recipe is as good as ours, but I must admit that I shall never be able to speak the English language as well as you do, though I must say, that the circle I live in, we may equal your sense of humour. Thank you, and since it is still January, may you have a good and healthy year 2024. making more marmalade with more than a pinch of a British sense of humour.

To answer (bitterness & pith): yes, the bitterness is indeed mostly localized to the white pith in various citrus fruits as well as gourds like chinese bitter melon. In this instance, the bitterness sensation is mostly caused by the high TANNIN content in the pith. Tannin itself is harmless to us, and is not a potentially risky alkyloid that the sensation warns us to avoid by default.

I've always made modifications to a recipe that i got from a source that had a scientific level training, like Master Food Preservers, or a University Food Preserving Program

So, I'm curious about your ideo to have 50% sugar to whatever amount of fruit, as you mentioned.
...what is your source for arriving at that number? and, is that 50% only for orange marm? or, for all fruit preservation?

one of my basic, very old, points I burned into memory from my early days learning from trained professionals was the idea that, for a safe, shelf stable final product, three things are THE most important: 1. high heat 2. sugar 3. acidity

not sure i agree that leaving the bitter white pith makes no diference

and on style, i dont like grating the peel, i like thin strips of peel, which is sorta the appeal (no pun), of marm--the texture

but great video, and looks delicious

Normal orange is a bit tangy but nearly not bitter at all, Seville orange is bitter but nicely and refreshingly, while the Bergamot is so bitter that it is barely edible (although I LOVE it!). Kumquats, very bitter and sour when eaten fresh, once cooked in marmalade are only sweet and relatively aromatic. There you go...

Three step marmalade recipe
Three orange juice
One cup sugar
One cup water
Half lemon juice
Orange peel thinly slice
Boil till dense

I accidentally left all the orange pulp in, and added a 1/2 cup of whiskey, it was amazing.
